Perfect hearty soup for those cold winter evenings.
Ingredients:
- 1 tin whole kernel sweetcorn drained
- 1 tin cream style sweetcorn
- 1 peeled potato cut into cubes
- 2 chicken stock cubes, dissolved
- Salt & pepper to taste
- 4 tablespoons fresh cream
- 2 fresh chillies, finely chopped
- 1 bunch finely chopped spring onions
- 4 cloves garlic finely chopped
- 2 cups milk
Prep Time: 25 minutes
Serving: 4 people
Method:
- Fry onions, potato, garlic and chilli till tender and onions are soft.
- Add both tins of sweetcorn, chicken stock, salt and pepper, & milk.
- Blend until creamy then add in cream.
- Serve hot with buttered toast or croutons.
