Corn and Chilli Soup

Perfect hearty soup for those cold winter evenings.sweetcorn-chilli-soup

Ingredients:

  • 1 tin whole kernel sweetcorn drained
  • 1 tin cream style sweetcorn
  • 1 peeled potato cut into cubes
  • 2 chicken stock cubes, dissolved
  • Salt & pepper to taste
  • 4 tablespoons fresh cream
  • 2 fresh chillies, finely chopped
  • 1 bunch finely chopped spring onions
  • 4 cloves garlic finely chopped
  • 2 cups milk

 

Prep Time: 25 minutes

Serving: 4 people

Method:

  • Fry onions, potato, garlic and chilli till tender and onions are soft.
  • Add both tins of sweetcorn, chicken stock, salt and pepper, & milk.
  • Blend until creamy then add in cream.
  • Serve hot with buttered toast or croutons.
